We are currently in the process of opening up our brick and mortar restaurant, Fat Choy @ the Eureka Casino. Due to the demands of pre-opening projects, we are taking a few weeks to focus 100% of our attention on the restaurant. Fat Choy is projected to open on January 9, 2013. The Great Bao Truck will resume serving this awesome city again soon. Thank you for your continued support and we hope to see you at the new restaurant!

Downtown Project Las Vegas
Below is a video me and Jenny submitted for the Downtown Project. Since moving to Las Vegas almost 8 years ago, I've seen downtown slowly redevelop. Just in this past year, it seems like things are really coming together for the city. Bravo to all the people who have helped build it. We hope that Great Bao can be a piece to this giant puzzle that will help further the downtown dream for many people.

Food Network's CHOPPED
Who has watched my Chopped episode? (Season 13, Episode 1) It actually aired a few weeks ago. I still haven't watched it. I've been really busy working with the food truck + Jenny and I are expecting to welcome our son, Sterling into the world sometime this month. This year has been a crazy ride, and I couldn't have done it without so much support. Thanks to you all.

Our Last Days with Touch Salon
Our lease with the salon was actually until September 16th, 2012. However, the salon had a change of ownership and the new owner doesn't really want to completely honor the lease, except for the part where we pay them money. Of course, we are very civil and knowing that we need to find a larger space anyway, we have accepted the fact that we will need to move out of the salon by July 16th, two months short of our actual lease end date.
We could be evil and ask them to do a buy out. Other than contemplating the evils of what could go on in this world, we are also trying fervently to look for a new space, and will let all of you know as soon as that happens. Please continue to support us wherever we go and whenever we grow. We look forward to all our OGs, our Original Guests, and our FGs, our Future Guests. Thank you for your support in this time, the time before, and the time after.

Back in September of 2011, I opened Great Bao with this electric burner, a saute pan, a stock pot, and a couple steam baskets. It was as minimal as it could possibly get for our tiny start up. We were fortunate to have restaurants like Komex and Viva Las Arepas donate various equipment to us. In these past few months, we have been able to serve thousands of guests with this little setup, but as Great Bao continues to grow, it's time for me to find a real kitchen. A big THANK YOU goes out to everyone who has ever supported Great Bao. It's been a pretty cool ride so far and I hope everyone stays on....because the transition begins now.
